Ramen is supposed to be hearty, rich, and deeply satisfying. It shouldn’t suddenly become boring just because you can’t eat gluten. At Groundhog Social, our signature pork ramen has been gluten-free from the start — and it’s one of the most popular dishes on our entire menu.
The Noodle: Why We Chose High-Quality Rice Noodles
Traditional ramen noodles are made with wheat flour. When we first developed our pork ramen, we were incredibly proud of the rich flavours and the from-scratch pork, but it contained traditional wheat noodles. It wasn’t until a former staff member who lived with coeliac disease pointed it out — simply asking, “Oh, are those noodles gluten-free?” — that we realised we were missing an opportunity.
Rather than accepting that coeliac diners would just miss out, we took it back to the drawing board. Our chef tested and intentionally swapped to high-quality gluten-free rice noodles. We needed a noodle that would hold up in the rich broth, carry the right amount of chew, and complement the other components without falling short.
The result? The rice noodles weren’t just a passable substitute; they made the whole dish better. Now, everyone gets to enjoy a hearty bowl of ramen that feels like the real thing — because it is.
Our 3-Stage House-Smoked Pork Process
The pork in our ramen goes through a three-stage house process:
- Brined in a house-prepared seasoning mix
- Smoked in-house for deep, layered flavour
- Slow-cooked in the oven until fall-apart tender
This isn’t a quick turnaround. It’s a multi-day process that our kitchen commits to every week. The smoking adds a richness and complexity that simply isn’t available from a pre-made supplier. Combined with the gluten-free rice noodles and our house-prepared broth, the bowl delivers on every level.

Why “Gluten-Free by Design” Matters
There’s a significant difference between a dish that’s reluctantly modified by stripping out ingredients, and a dish that’s intentionally refined based on honest human feedback. When our team member pointed out the flaw in our original ramen, we didn’t just remove an ingredient and hope for the best. We listened, we cared, and we actively sought out a premium alternative.
We didn’t pretend we had it right on day one. By choosing to embrace that feedback, we created a dish that reflects our core belief: dietary inclusivity shouldn’t mean a sacrifice in flavour. The rice noodles might have started as a swap, but today, they are the recipe.

Dietary inclusivity at Groundhog Social isn’t new. For years we’ve been championing gluten-free options that genuinely deliver. This started with the influence of former staff members living with coeliac disease and has been reinforced by our community’s feedback over the years.
